    Yellow Squash-Pecan Breakfast Bread

    List of Ingredients

    1 cup oil
    2 tsp Mexican vanilla
    3 large eggs
    3 cups flour
    1 cup sugar
    3/4 tsp salt
    1 tsp cinnamon
    1/4 tsp mace
    1/2 tsp baking soda
    2 cups yellow squash, raw (uncooked) & grated
    1 cup pecans, roasted

    Recipe

    Whip the first 3 ingredients together for 1 minute. Then toss remaining ingredients into the oil/mixture & beat until smooth. Pour into a 10" (greased & floured) bundt pan; bake at 350° tall & brown. Be sure to check it with a toothpick to be sure the center of the cake is done.
