    Apple Puff Pancake

    My modified version of Lynnette's

    List of Ingredients

    PANCAKE
    3 eggs
    1/2 cup sifted flour
    1/2 tsp salt
    1/4 tsp freshly grated nutmeg
    1/2 cup milk
    1 tbsp butter

    1 can (20 oz) apple pie filling

    Recipe

    PANCAKE: Preheat oven to 450º. In medium bowl, beat eggs until blended. In separate bowl, sift flour with salt and nutmeg. Add flour mixture to eggs in three additions, alternating with additions of milk. Beat just until mixture is smooth after each addition.

    Add butter to 10" cast iron skillet. Place in oven until butter melts. Remove skillet from oven using hot pad and pour in pancake mixture. Bake for 20 minutes or until puffed and golden brown. When done, remove from oven and arrange on a serving plate.

    Warm apple pie filling in medium skillet over low heat, add 1/2 tsp cinnamon if desired. Spoon onto center of puff pancake as above. Serve immediately
