    EGGS: Crustless Quiche

    List of Ingredients

    1 tablespoon light butter
    1 cup broccoli, blanched & chopped
    1 1/2 cups Swiss cheese, lowfat, shredded
    1/4 cup onion, chopped
    1 cup lean ham, diced
    2 cups skim milk
    2 large eggs
    2 large egg whites
    1/2 cup flour
    1 teaspoon baking powder
    1/2 teaspoon salt
    1/8 teaspoon each: Freshly ground pepper & Nutmeg

    Recipe

    Grease a 9" pie plate. Mix broccoli, cheese, onion & ham. Spread in pie plate. In a blender, at high speed, blend milk, eggs & egg whites, flour, baking powder & seasonings. Pour over vegetables mixture. Bake at 325° for 45 minutes or until knife inserted in middle comes out clean. Let stand 5 minutes before serving. Makes 4 - 6 servings.
