    Chocolate Pear Spice Cake

    2 cups all-purpose flour
    1 tablespoon ground cinnamon
    2 teaspoons baking soda
    1 teaspoon nutmeg, finely grated
    1/2 teaspoon baking powder
    1/2 teaspoon salt
    1/4 teaspoon ground cloves
    6 tablespoons butter, softened
    1 cup sugar
    3 tablespoons molasses
    2 eggs
    2 cups unsweetened applesauce
    1 tablespoon orange peel, finely shredded
    1 small Bosc pear, peeled, cored and thinly sliced
    2 ounces bittersweet chocolate (and/or milk chocolate) coarsely chopped
    1/2 cup walnuts (hazelnuts or pecans) coarsely chopped

    1 recipe Pear Chips, optional
    Whipped Cream, optional

    Preheat oven to 350*. Grease and flour a 9" springform pan; set aside. In a medium bowl, stir together the flour, cinnamon, baking soda, nutmeg, baking powder, salt and cloves'; set aside.

    In a large mixing bowl combine butter, sugar, and molasses; beat with an electric mixer on medium speed until combined. Add the eggs, one at a time, beating just until combined after each addition. Beat in the dry ingredients alternately with the applesauce, starting and ending with dry ingredients. Stir in orange peel.

    Spoon the batter into the prepared pan. Arrange pear slices on top of the batter in one layer. Sprinkle with chopped chocolate and nuts. Bake 1 hour or until the top springs back when gently touched and a toothpick inserted in the center comes out clean. Cool in pan on wire rack for 10 minutes. Remove sides of pan. Serve warm with Pear Chips and whipped cream. Makes 10 servings.

    PEAR CHIPS: Using a mandoline, very thinly slice a small bosc pear. Place pear slices on a large baking sheet lined with parchment paper. Bake at 300* oven for 20-25 minutes until golden brown and crisp, turning once.
