Cranberry Bundt Cake

1 c olive oil
3 eggs
2 c sugar
2 c flour
1 c buttermilk
1 c fresh or frozen cranberries (even dried can be subbed)
1 tsp baking soda
1 tsp cinnamon
1/4 tsp nutmeg
1 tsp cloves
1 tsp salt
PAM - olive oil flavor
Recipe
Preheat oven to 350°. In a large bowl beat eggs until foamy. Add sugar, and continue to beat until mixture is light and fluffy. Stir in olive oil. In a small bowl mix baking soda and buttermilk. Alternately beat flour and buttermilk mixture into egg mixture. Stir in remaining ingredients, and pour into a 9" tube or bundt pan, lightly sprayed with olive oil PAM - pan may also be floured. Bake for 60 to 65 minutes or until a toothpick comes out clean. Serves 12 to 16
