    Gâteau de Metz-Chocolate Cake from Metz

    List of Ingredients

    4 eggs
    1 cup sugar
    1 cup flour, sifted
    1 scant cup crème fraîche **
    4 oz. semi-sweet chocolate, grated

    Recipe

    Preheat oven to 350°. Butter an 8-inch round cake pan. Beat the eggs and sugar together and blend in flour. Stir in crème fraîche and the grated chocolate until completely incorporated. Pour the patter into the buttered cake pan. Bake for 45 minutes or until tester comes out clean. Remove from pan and allow to cool on a rack before serving.

    **Crème Fraîche

    Crème fraîche is an essential ingredient in many French dishes but it not always available in local grocery stores. You can make your own very easily but you'll need to plan to make it at least the evening before you want to use it.
