    One 18.5 oz box Pillsbury yellow cake mix
    3/4 c sour cream
    1/2 c salad dressing - use Miracle Whip NOT mayonnaise
    4 eggs
    1/4 c cold water
    2 tsp cinnamon
    2 c carrots, shredded*
    1/2 c pecans or walnuts, finely chopped
    Cool Whip (8 oz)

    Preheat oven to 350°. Spray a 13x9" baking dish with new Baker's Joy spray w/ flour. In a large mixing bowl, mix cake mix, sour cream, salad dressing, eggs, water, and cinnamon. Beat until well blended and smooth. Stir in carrots and pecans. Pour into prepared baking pan. Bake for 35-38 minutes or until done. Cool in pan a wire rack. Spread Cool Whip over top and sprinkle with pecans. Serves 12-16

    *If you're short on time you can buy preshredded carrots & use them.
