    SALAD: Mandarin-Chicken Salad

    List of Ingredients

    2 cooked chicken breasts, cut into bite-sized chunks
    1 stalk (rib) of celery (optional)
    4-5 diced green onions (or to taste)
    1 11 oz. can Mandarin oranges (or may use fresh orange segments)
    about a 1 lb. package of mixed salad greens of your choice
    small package of fried Chow Mein noodles
    Bottled Poppy-seed dressing to taste

    Recipe

    Just before eating, lightly mix all ingredients together. This
    is very simple and delicious, and serves about 4 as a main-dish
    salad. We usually double the recipe, because we serve 6, 3 of
    whom are teen-aged boys. With the addition of rolls and fruit,
    this makes a light, delicious summer meal.
