    Chocolate Dotted Orange Biscotti

    BH&G Christmas Cookies 1998

    List of Ingredients

    1/3 cup butter or margarine
    2/3 cup sugar
    2 teaspoons baking powder
    2 eggs
    2 teaspoons finely shredded orange peel
    2 tablespoons orange liqueur or orange juice
    2 cups all-purpose flour
    1/2 cup miniature chocolate chips
    1/3 cup semisweet chocolate chips
    1/2 teaspoon shortening

    Recipe

    Beat butter or margarine on high speed for 30 seconds. Add sugar and baking powder; beat til combined. Beat in eggs and orange liqueur or orange juice until combined. Beat in as much of the flour as you can with the mixer. Stir in orange peel, remaining flour, and 1/2 cup of mini chocolate chips. Divide dough in half. With lightly moistened hands, shape each dough half into a 9" loaf. Place loaves about 4" apart on a lightly greased cookie sheet. Flatten slightly to 3" wide.

    Bake at 375 degrees for 20-25 minutes or til a wooden toothpick inserted near the center comes out clean. Cool on a cookie sheet for 30 to 60 minutes or until completely cool. Transfer to a cutting board. Using a sharp knife, cut the rolls diagonally into 1/2" slices. Place slices, cut sides down, on an ungreased cookie sheet.

    Bake at 325 degrees for 8 minutes. Turn over and bake 7-9 minutes more or until cookies are dry and crisp (do not overbake). Transfer slices to wire racks to cool. Melt together 1/3 cup chocolate chips and shortening over low heat. Dip bottom edge of each cookie into melted chocolate. makes 36 biscotti
