    SHORTBREAD: Shortbread Squares

    Barb (HOST PS Barb) Parent Soup 11/16/01

    List of Ingredients

    2 cups butter, NO substitutions
    1 cup sugar
    4 cups flour, plus 2 tbsps
    Coarse colored sugar

    Recipe

    Cream together butter and sugar until smooth. Add flour. Mix in until well blended (I use my pastry blender!) Mixture will be crumbly. Turn mixture into well-greased 9x13" baking pan. Cover with waxed paper. Press evenly in pan by pressing on waxed paper with palms of hands. Remove paper. Prick top of dough closely with fork. Bake 90 minutes on center rack of pre- heated 275°F oven. Turn off heat; remove pan from oven. Cut at once into 1" squares. Return pan to oven; close door. Remove pan from oven when oven is completely cool. Sprinkle with coarse sugar. Store in airtight container. Makes 10 dozen.
