List of Ingredients

1 can apple pie filling (21 oz)
3 large eggs
2 teaspoons apple pie spice
1 package yellow cake mix (18 oz)


Recipe

Beat all together with electric mixer on medium-speed. (or "mash" with a potato masher if you prefer chunks in your muffins) Divide batter equally between 24 paper-lined cupcake wells. Bake in a preheated 350° for 25 to 30 minutes or until knife inserted comes out clean. Allow to cool before peeling off paper liners.

My Notes: This can be made with a variety of different pie fillings/cake mixes and nuts..........cherry or strawberry filling with yellow, chocolate or butter cake mix (use almonds & almond extract), peach filling with yellow, butter pecan or cake mix, blueberry filling with yellow or lemon cake mix, or try the apple with a spice or carrot cake mix! You can use your imagination and make a few of your own recipes!
