    Makes 4 servings

    List of Ingredients




    1 tbsp oil
    4 boneless skinless chicken breasts
    3 medium potatoes, peeled and chopped
    1 medium onion, sliced
    1 can (14 oz) coconut milk = reg or lite NOT cream of coconut
    1 cup chicken broth
    1-1/2 tsp curry powder
    1 tsp hot pepper sauce (optional)
    1/2 tsp salt
    1/2 tsp black pepper
    1 package (10 oz) frozen peas
    Hot cooked rice (optional)

    Recipe



    1. Heat oil in medium skillet over medium-high heat. Brown chicken breasts on both sides. Place potatoes and onion in slow cooker. Top with chicken breasts.

    2. Combine coconut milk, broth, curry powder, pepper sauce, if desired, salt and pepper in medium bowl. Pour over chicken. Cover; cook on LOW 6 to 8 hours.

    3. About 30 minutes before serving, add peas to slow cooker. Serve over hot cooked rice, if desired
