    List of Ingredients




    1 1/2 pounds lamb, cubed (lamb stew meat) or diced
    4 tablespoons light butter
    1 onion, minced
    1 tablespoon curry powder
    2 tablespoons flour
    1/3 cup lentils
    2 tart apples, peeled & diced
    1 bell pepper, diced
    2 carrots, diced
    1 teaspoon sugar
    1/2 teaspoon ground mace
    1/4 teaspoon ground cloves
    salt and pepper, to taste
    1 cup light coconut milk

    cooked white rice

    Brown the meat in butter in a skillet. Add onion, curry powder and flour and cook and stir for 2 minutes. Combine with remaining ingredients, except coconut milk, and 2 quarts of water in the crockpot. Cover and cook on LOW 8 to 10 hours. Add coconut milk, heat through, and serve with rice.
