    Overnight Oatmeal

    List of Ingredients

    1 cup Scotch oats (Irish, or Pinhead" Oats) or other oat steel-cut *see Note
    1 cup dried cranberries
    1 cup figs, dried, *see Note
    4 cups water
    1/2 cup half and half, or fat free half & half

    Recipe

    In a crockpot, combine all ingredients and set to LOW heat. Cover and let cook for 8 to 9 hours.

    Stir and remove to serving bowls. This method works best if started before you go to bed. This way your oatmeal will be finished by morning. Yield: 4


    Notes:
    I prefer dried cherries & blueberries

    Scotch oats or steel-cut oats or Irish oatmeal are all names for groats that have been cut into 2 to 3 pieces and not rolled. They take considerably longer to cook than rolled oats and have a decidedly chewy texture.

    DO NOT use regular or old fashion oats unless you want mush!
