1 lb 92%, lean ground beef or ground turkey
1 small head cabbage, cored & cut into small wedges
1 small onion, chopped
1 c celery, sliced
1 c carrots, sliced
1 c zucchini, sliced
1 c turnips, sliced
1 can (46 oz) V-8 Juice - regular, Spicy or Salsa kind
1 c brown rice, barley or bulgur
Coarse Black Pepper, to taste
Recipe
Brown meat & drain all fat. Place in crockpot, top with vegetables, cover with V-8 juice & season with pepper. Cook for 4-6 hrs on LOW. Add rice/barley/bulgur & cook 1 hr longer or until grain is cooked (allow 1 1/2 hrs to cook if using rice). Makes 12 one-cup servings.
