Amaretto Eggnog Bread Pudding

2 loaves of egg bread
3 eggs
1 cup sugar
1 tsp vanilla
1 cup Amaretto
1 quart eggnog
2 tbsp cinnamon
1 cup raisins, dried cranberries or chopped nuts - optionalRecipe
Tear up the bread into chunks. Beat eggs into eggnog, add amaretto and vanilla. Pour over bread and mix with hands until product has a texture like very wet, soft stuffing, adding more Amaretto, if needed, to achieve proper texture. It will set up as it bakes. Add raisins or nuts and bake it at 350° for about 45 minutes, uncovered. Serve warm or cold.
