Filling for Cannolis

2 pounds whole milk ricotta cheese
1 1/2 cups powdered sugar
2 teaspoons vanilla (2 to 3 tsp)
miniature chocolate chips, chopped or grated chocolate
Candied fruit, opt

Beat ricotta cheese until smooth and light (fluffy). Add powdered sugar and vanilla. Fold in chocolate chips.
This filling recipe is enough for about 24 shells. After filling shells, dip ends of cannoli into toasted pistachio nuts. Fill only just before ready to serve. Sprinkle powdered sugar over the tops.
Chocolate Cannoli
15 oz carton WHOLE MILK Ricotta cheese
1 2/3 c powdered sugar, sifted
1/4 c European or unsweetened cocoa
1/2 c heavy whipped cream
