    ITALIAN: Pignoli Cookies (Pine Nut Cookies)

    List of Ingredients

    1/2 lb almond paste
    1 c sugar
    2 egg whites
    1/4 c pine nuts

    Recipe

    Use a pastry chopper to break up almond paste into a granulated form. Put in mixing bowl & gradually add the sugar. In another small bowl, beat egg whites until stiff. Fold egg whites into the sugar/almond mixture gently. On a greased & floured cookie sheet, drop a spoonful of the mixture. Press pine nuts into top of each cookie (you can completely cover the top w/ nuts if you like). Bake at 325° for 10-12 minutes. Cool on wire rack. Makes 2
    dozen cookies.
