    Fresh Mahi Mahi with Grilled Pineapple Salsa

    List of Ingredients

    1 fresh pineapple
    2 roasted red peppers (2 to 3)
    1 small yellow onion, sliced
    1/4 cup each: fresh mint, cilantro and basil, minced and combined
    Sea or kosher salt
    Coarse black pepper

    Recipe

    Skin, quarter and core the pineapple. Grill until marked on both sides and allow it to cool slightly. Lightly caramelize the onion. Place all ingredients except the fresh herbs in a food processor and puree until desired consistency. Add herbs and season for salt and pepper. Grill fish to desired temperature and garnish with salsa.
