    Greek Salad w/ Oregano-Feta Dressing

    Recipe Introduction

    This is another favorite recipe of mine that originally came from a WW cookbook. Though it is normally served as a side salad my family prefers it as our main meal so you'll want to double the recipe if serving 4 as a main course

    List of Ingredients

    DRESSING
    3/4 cup crumbled Feta cheese
    2 tbsp fresh lemon juice
    2 tsp olive oil
    2 cloves garlic, crushed
    1/2 tsp dried oregano, crumbled
    1/4 tsp freshly ground pepper
    2 tbsp water
    2 tbsp minced green bell pepper

    SALAD
    3 cups romaine lettuce leaves, torn
    2 plum tomatoes, cut into wedges or sliced
    1 English cucumber, seeded, peeled & thinly sliced
    1/2 red onion, thinly sliced
    6 large Greek olives, pitted & sliced

    Recipe

    DRESSING: In a mini food chopper (or blender), combine Feta, lemon juice, oil, garlic pepper & water. Purée. Add bell pepper & purée again.

    AS A SIDE SALAD (4): In a large salad bowl, combine lettuce, tomato, cukes & onion. Drizzle with dressing & toss to coat. Sprinkle with olives. 3 WW points for 1 serving

    MAIN DISH SALAD: (How I like to serve) Divide lettuce evenly among 2 large salad plates. Top with cukes, tomatoes & onions. (I also top with a few crumbled pieces of Feta that I hold back from the dressing). Pour dressing over & toss. Try some fat free jumbo croutons on top too! This serves 2 for a total of 6 WW points each


    I like to hold "back" some of the Feta and top the salad with it.
