    Cajun Butter

    Recipe Introduction

    Pour this zesty blend of Cajun spices, butter, and chicken broth over cooked vegetables, such as carrots, zucchini, cauliflower, broccoli, or corn.

    List of Ingredients

    1/4 teaspoon chili powder
    1/4 teaspoon ground black pepper
    1/8 teaspoon garlic powder
    1/8 teaspoon ground red pepper
    2 tablespoons light butter
    1 teaspoon cornstarch
    1/4 cup reduced-fat chicken broth

    Recipe

    Stir together chili powder, black pepper, garlic powder, and red pepper. Cook in hot butter for 1 minute. Stir in cornstarch. Add chicken broth. Cook and stir over medium heat until thickened and bubbly. Cook and stir for 2 minutes more. Serve warm over cooked corn or other vegetables. Makes enough for 4 servings.


    Note: I lightened this recipe (from the original) up by using light butter and non fat chicken broth.
