    MUFFINS: Cherry Coconut Muffins

    2 cups flour
    3/4 cup sugar
    3/4 cup coconut, unsweetened
    1 tbsp baking powder
    1 tsp baking soda
    1/4 tsp cinnamon
    1/4 tsp salt
    1 1/4 cups buttermilk
    2 eggs
    1/4 cup oil
    1 tsp pure vanilla
    1 cup dried cherries, chopped if needed

    Recipe



    In a bowl, stir together flour, sugar, 1/2 cup of the coconut, baking powder, baking soda, cinnamon and salt. In another bowl, whisk together the buttermilk, eggs, oil and vanilla. Add to the flour mixture and mix just until blended. Add the cherries and mix to combine. Spoon into lightly greased muffin tins, filling three-quarters full; sprinkle with remaining coconut. Bake in a 400°F oven for about 20 minutes or until golden and firm to the touch. Makes 18 muffins

    NOTE: Replace dried cherries with dried cranberries (craisins) if desired
