    Spicy Lemon Pepper Chicken w/ Fettucini

    Make sure you have plenty of WATER to drink -- to help with the spiciness of this dish! Spaghetti may be used in place of the fettucini if desired.

    List of Ingredients

    1 1/2 cups lemon juice, freshly squeezed
    1/2 package fettucine (4 oz) cooked & drained
    2 boneless skinless chicken breasts
    Parmesan cheese, freshly grated
    1/4 cup onion, chopped
    Freshly cracked black pepper, LOTS of it!
    2 tablespoons cayenne pepper
    3 tablespoons soy sauce

    Recipe

    Cut chicken breasts into 1" square pieces. In a 12" skillet pour 1/2 cup of lemon juice over chopped onion. Add 1 TBSP soy sauce. Begin heating this at a point between medium and high. Add chicken pieces to skillet. Carefully sprinkle cayenne over chicken. Cook until the chicken turns white - about 1/2 way through turn chicken over and sprinkle with black pepper - Generously! Be careful to watch liquid in the pan as it reduces, add more if necessary. Repeat this 2 more times - only this time WITHOUT using any more cayenne pepper. Continue to do so until you have use all of the soy sauce and lemon juice. Once liquid has begun to reduce some (if it is too thick repeat with more lemon juice). Remove chicken from skillet. Add cooked, drained fettucini to liquid in frying pan. Stir fettucini in the pan until all of the fettucini has been covered with liquid and is absorbed. The fettucini will obtain a light brownish color with peppered specks. Serve fettucini with chicken atop and sprinkle with Parmesan cheese. Add a salad and some crusty Italian or French bread for a complete meal. Serves 2 to 3.
