    9" graham cracker crust - bought or homemade
    2 tbsp flour
    1/4 cup sugar
    2 eggs
    2 pkgs (8 oz ea) cream cheese, softened
    One 12 oz jar Pumpkin Butter
    1 tbsp Rum extract
    One tub (8 oz) Cool Whip - for garnishing

    Preheat oven to 325degrees. With mixer at medium speed, beat cream cheese until fluffy. Slowly add/beat in sugar. Add eggs, one at a time, beating well after each addition. Gradually add flour and pumpkin butter. Pour batter into crust and bake for 45-60 minutes, or until filling is set and has begun to crack. Cool, serve with whipped cream, if desired.

    NOTE: This pie may be made with 1 pkg reg cream cheeese, 1 pkg nonfat cream cheese, LIGHT pumpkin butter and fat free Cool Whip for LESS fat/calories and no one will be the wiser!
