Fresh roma tomatoes, basil, virgin olive oil, oregano and fresh mozzarella.
List of Ingredients
Dough for one pizza
1 can crushed Italian tomatoes (28 oz) *see notes
1 clove garlic, minced
6 basil leaves, chiffonade
Extra virgin olive oil
1/2 pound shredded mozzarella cheese
Recipe
Preheat the oven to 500°F. Lightly oil a 17" pizza pan. Spread dough onto the pizza pan and top with half of the crushed tomatoes. Add garlic and basil. Drizzle with olive oil. Bake 10 minutes; then slide the pizza off the pan onto an oven rack and bake 5 minutes.
Slide the pizza back to the pizza pan and top with mozzarella. Bake until cheese melts (3 to 5 minutes). Serves 4 - makes one 17" pizza
MY NOTES:
In the summer use freshly crushed tomatoes (Roma/Plum), fresh basil leaves and grill outdoors over a HOT grill.
Fiore di Latte (means "flower of the milk" is fresh mozzarella)
This pizza is dedicated to Queen Margherita. She was interested in the popular dish that her French chefs could not prepare so the famous "pizzaiolo" Raffaele Esposito was invited to court and suggested three pizzas, this one reflecting the colours of the Italian Sabauda flag, the Marinara and a white cheese pizza. Garlic, considered improper for the delicate palate of the Queen was avoided. So on the 11th June 1889 Pizza became a dish fit for Royalty.
Pizza should be baked in a wood fired brick bread oven, but as this is almost impossible to find in a home we will have to make do with a gas or electric fired oven. NB The oven must be really hot or the pizza takes too long to cook and hardens.
