    List of Ingredients




    3 tbsp olive oil
    2 cloves garlic, minced (2 to 3)
    1 c uncooked rice
    1/2 c red onion, chopped
    1 can Mexican tomatoes (16 oz) undrained
    1/2 c water
    1/4 c chopped green bell pepper
    1/2 c fresh chopped cilantro - opt

    Recipe



    Heat the oil in a skillet. Add rice and cook until light browned. Add garlic and cook 1 minute longer. Add undrained tomatoes, water, onion and pepper. Bring to boil. Reduce heat, cover tightly, and simmer about 15 minutes or until rice is done. Add fresh cilantro, if desired and serve.
