Texas Style Barbecued Brisket

3 1/2 pounds beef brisket (3-4 lbs) cut into halves if necessary
3 tbsp Worcestershire sauce
1 tbsp chili powder
1 tsp celery salt
1 tsp black pepper
1 tsp liquid smoke flavoring
2 cloves garlic, minced
2 bay leaves
---Barbecue Sauce---
2 tablespoons oil
1 medium onion, chopped
2 cloves garlic, minced
1 cup ketchup, *see Note
1/2 cup molasses
1/4 cup cider vinegar
2 teaspoons chili powder
1/2 teaspoon dry mustard
Recipe
TRIM excess fat from meat & discard. Place meat in a large freezer Ziploc bag. Combine remaining ingredients, except BBQ & mix in a small bowl. Spread mixture on all sides of the meat. Seal bag. Refrigerate 24 hours. (I turned the bag over every once in awhile)
PLACE meat & marinade in crock pot. Cover & cook on LOW for 7 hours. Meanwhile, prepare BBQ Sauce.
REMOVE meat from crock pot & pour juices into a 2-cup measuring cup. Let stand 5 minutes. Skim fat from juices. Remove & discard bay leaves. Stir in 1 cup of defatted juices into BBQ sauce. Discard remaining juices. Return meat & BBQ sauce to crock. Cover & cook 1 hour or until meat is fork-tender. Remove meat to cutting board. Cut across grain into 1/4" thick slices. Serve 2 to 3 tablespoons BBQ sauce over each slice. Serves 10 to 12.
SAUCE: Heat oil in medium saucepan over medium heat. Add onion & garlic. Cook until onion is tender. Add remaining ingredients. Simmer 5 minutes. Makes 2 1/2 cups of sauce.
NOTES:
I prefer to use Chinese ketchup (Hoisin sauce)
I really enjoy this BBQ sauce, but using your favorite brand of BBQ sauce is okay too (Sweet Baby Ray's & Jack Daniels are my 2 favs!).
