Cooking With Three Ingredients

1/4 c extra-virgin olive oil (use a good quality brand)
1 c popping corn
1/2 tsp garlic powderRecipe
In a large heavy pot, heat 2 tbsp of the olive oil over high heat until it smokes, about 2 minutes. Add 1 kernel of popcorn as a test & heat until it pops. Add remaining popcorn & cover pot. Shake gently until kernels start to pop, then shake more vigorously until the popping subsides. Every so often, crack the lid to allow steam to escape, but not so far as to let flying kernels out. When popping subsides, remove the pan from the heat. Toss
the popcorn in a large bowl remaining oil, garlic powder & salt (kosher) to taste, if desired. This was enough for the 4 of us.
Note: Since I couldn't make this on my smooth top cook stove we used our gas grill's side burner -- turned out great!
