    List of Ingredients




    1 T. butter or olive oil
    1/2 c. chopped carrots
    1/2 c. chopped celery
    1/2 c. chopped onion
    2 cloves garlic, minced
    1 can (10 oz. Ro-Tel tomatoes & green chiles
    1/2 c. dry sherry
    3 cans (15-16 oz.) black beans, undrained
    salt, pepper to taste
    onion & garlic powder, to taste
    1/4 c. minced cilantro, optional

    optional garnishes: shredded cheese, sour cream, sliced lime

    Recipe



    In a large pot melt butter. Add carrots, celery, onions & garlic. Cook until tender, about 15 minutes. Add remaining ingredients and bring to a boil. Simmer for at least 20 minutes, stirring occasionally. Makes about 5 servings.

    Top off with dollop of sour cream, shredded cheese and squeeze of fresh lime.
