Hearty Minestrone Soup

Recipe Introduction
This might called "soup", but it's a whole meal when served with a loaf of crusty bread.
List of Ingredients
3 cans ready to eat beef broth (14 oz.each)
1 can canned red kidney beans (15 to 16 oz) rinsed and drained
1 can canned cannelini beans (14 oz.) rinsed and drained *Or white kidney beans
1 can canned crushed tomatoes (28 oz) undrained
1 pkg. frozen chopped spinach (10 oz.)
1 pkg. frozen mixed vegetables (10 oz.)
1 small onion, chopped
1 tsp. garlic powder
1 tsp. salt
1/2 tsp. black pepper
1 cup elbow macaroni, uncooked
Recipe
In a soup pot, combine all of the ingredients except macaroni. Bring to a boil and add the macaroni. Reduce heat to low and simmer for 30 minutes., or until the macaroni is tender. If you like, serve this topped with a little grated Parmesan cheese. Serves 4
Lynda Notes:
12/09/02: Used vegetable broth, whole wheat pasta & garlic pepper. Very good -- will make again. This will easily feed 6 people.
