List of Ingredients
1/2 cup tubettini, *see Note
1/4-1/2 cup salt pork, finely diced
1/2 cup chopped onion
1 clove garlic (1-2) minced
1 bay leaf
1 teaspoon dried oregano
1 (10.5 oz - 16 oz) jar spaghetti sauce or can use homemade sauce
6 cups water
2 cups thinly sliced green cabbage, **see Note
1 cup sliced zucchini
1 cup cooked string beans, ***see Note
1/2 cup thinly sliced carrots
2 tbsp chopped green pepper
1 1/2 tsp salt
1/4-1/2 tsp pepper
Recipe
Cook tubettini in salted water (1 tsp salt to 1 qt water) until done (about 15 mins); drain. In the meantime, brown the salt pork, using medium heat for 4-5 mins. Then add onion and garlic and cook until onion is transparent. Add bay leaf, oregano, sauce and water; simmer for 10-15 mins. Add remaining ingredients; cook until vegetables are tender. Remove bay leaf. Add tubettini and heat to serving temperature. Serves 8-10
Lynda's Notes:
To double recipe - use 2 jars plain sauce (16 oz ea)
*I use Ronzoni tubettini, but any small soup macaroni may be substituted.
**Fresh or frozen green beans may be used - fresh is best!
***I buy the precut coleslaw mix sold in the produce section & use that sometimes
