    Southwest Vegetable Soup

    This soup is so simple .......even hubby can make it! =)

    List of Ingredients

    2 cans no-salt-added fat-free beef broth soup (14-ounce)
    1 can canned zucchini, Italian style (14-ounce)
    1 can canned yellow squash (14-ounce)
    1 can canned yellow hominy (14-ounce) or canned whole corn
    1 can canned okra (14-ounce)
    1 can tomatoes with green chilies (10 ounce)
    1 can canned black beans (15-ounce)
    1 can Wolf Brand turkey chili 99% fat free (15-ounce)
    Salt, to taste - optional

    Recipe

    Dump all UNDRAINED cans together in large pot and simmer 30 minutes to 1 hour. OR put all into a large crockpot and set on LOW. (I like the crockpot) You can also use corn in place of hominy if you like. Makes about 14 cups


    Notes:
    2 Weight Watchers point per serving (about 2 cups) when using Wolf Brand 99% fat free turkey chili
