Olive Oil for sauteing
4 Tbsp. onion, chopped
4 Tbsp. carrot, chopped
4 Tbsp. celery, chopped
2 Tbsp. oregano
2 Tbsp. basil
1 cup carrots, sliced
2 boxes frozen spinach
3 cups frozen tortellini
8 cups chicken broth
Parmesan cheese
Recipe
Heat oil. Sauté onion, carrot and celery. Stir in spices. Add chicken broth and sliced carrots and heat to boiling. Add spinach and simmer for 10-15 minutes. Add tortellini. Cook on a slow boil for 10 minutes, then reduce heat. Add chicken broth as needed. Sprinkle with Parmesan to serve.
