    Greek Pizza

    Recipe Introduction

    This recipe is something I came up with after seeing it done in a WW cookbook, but their's was on pita bread. I thought making it look like a "real" pizza my family would be more tempted to try it and they did! It is now one of my most requested pizzas.

    List of Ingredients

    1 Boboli shell, *see Note
    10 ounces frozen spinach, thawed and drained
    8 ounces feta cheese, crumbled
    4 roma tomatoes, sliced 1/2-inch thick
    4 scallions, chopped
    Dill weed, fresh, chopped
    Garlic salt
    Black pepper, coarsely ground
    Greek Oregano

    Recipe

    Preheat oven to 450°. Mix spinach, chopped scallion & dill weed in small bowl. Season with garlic salt & pepper. Set aside. Lay tomato slices on top of crust. Then spread spinach mixture evenly over tomatoes. Next spread crumbled Feta cheese on tomatoes. Last sprinkle some oregano over Feta. Bake at 450° for 10 - 15 minutes. Serves 8 (1 slice each).


    MY NOTES:

    Boboli Shell may be spritzed with olive oil spray and sprinkled with coarse salt and baked for 3 minutes prior to putting the toppings on.

    WEIGHT WATCHER POINTS (per slice): 5

    These are very nice sized slices! Two slices and a salad with fat free dressing makes a nice supper......all for 11 points!
