4 Medium Ripe Bananas
1 Cup Whole Wheat Flour
1 Cup Unprocessed Wheat Bran
2 teaspoons Baking Powder
½ teaspoon Baking Soda
1 Cup (8 oz.) Fat Free Vanilla Yogurt
2 Egg Whites
1/2 Cup Splenda Granular
1 Tablespoon Vanilla Extract
1/2 teaspoon Cinnamon
Recipe
Preheat oven to 375°F. Smash bananas with the bottom of a glass. Add yogurt, egg whites and vanilla; process until mixed. Combine dry ingredients in a large bowl. Mix in wet ingredients until just moistened. Divide batter into 12 muffin tins sprayed with non-stick cooking spray (approx. 1/3 cup mix per tin). Bake for 25 minutes. Makes 12 muffins
