This is from an old WW ckbk - when they did exchanges, but still fits well in today's WW points plan.
List of Ingredients
4 pita breads, whole wheat fat free, sliced in half through the middle making 2 "crusts" from one *see Note
1 package frozen chopped spinach (10 oz box) thawed and drained
4 ounces crumbled feta cheese with basil and tomato
4 roma tomatoes (4-8 depending on size) sliced 1/2-inch thick
4 scallions, chopped
dill weed, fresh, chopped
garlic salt
black pepper, coarsely ground
oregano, or Greek Seasoniings
Recipe
Preheat oven to 450°. Mix spinach, chopped scallion & dill weed in small bowl. Season with garlic salt & pepper. Set aside. Divide tomato slices among 8 ;pita halves and lay on top of each pita. that has been cut diagonally (making 2 "crusts" from one) crust. Then spread spinach mixture evenly over tomatoes. Next spread crumbled Feta cheese over top tomatoes. Sprinkle oregano (or Greek Seasonings) over Feta. Bake at 450° for 10 - 15 minutes.
Serves 8 (1 slice each).
NOTES:
Pitas may be spritzed with olive oil spray and sprinkled with coarse salt, then broiled for 1-2 minutes prior to placing toppings on.
