    1 pt ~ One-Point Hearty Chili

    List of Ingredients

    10 ounces extra lean ground turkey breast, or Boca Crumblers
    1 med onion, diced
    2 cans diced tomatoes (28 oz)
    2 med zucchini, diced
    2 med yellow squash, diced
    1 can canned black beans (15 oz) rinsed & drained
    2 cans no-salt-added fat-free beef broth soup (15 oz) or vegetable broth
    4 celery stalks, diced
    2 green peppers, diced
    1 package chili seasoning mix (1.25 oz)

    Recipe

    Spray a large nonstick skillet with nonstick cooking spray and set over medium-high heat. Add turkey & onion and sauté until browned, about 5 minutes. Transfer browned turkey/onion mixture to a large soup pot and add tomatoes, zucchini, squash, beans, broth, celery, peppers & chili seasoning. Bring to a simmer over medium heat. Continue to simmer until the vegetables are tender. Makes 20 (1 cup) servings.

    Per serving (1 cup): 76 calories, 1 gr fat, 8 mg chol, 270 mg sodium, 11 gr carb, 3 gr fiber, 7 gr protein, 34 mg calcium
