SOUR CREAM CHEESY ENCHALADA CASSEROLE

1 can condensed creamy chicken soup
1/2 c. sour cream
2 T. milk
1 (4 oz. can) diced green chilis
2 scallions, chopped
9 corn tortillas
2 c. chopped chicken
1/2 red bell pepper,chopped
1/2 lb. cheddar cheese, shredded
1 (2.2) can sliced olives, drained
TOPPING
sour cream
guacamole
shredded lettuce
chopped tomatoesRecipe
Preheat oven to 350 degrees. Mix together soup, sour cream, milk, chilis and scallions. Arrange 3 tortillas in bottom of 11 X 7-inch baking dish. Sprinkle with half the chicken,then half the red pepper. Sprinkle with a third of the cheese, then top with a third of soup mixture, spreading evenly. Repeat layers. Top with remaining tortillas, olives, remaining soup mixture, and then sprinkle with remaining cheese. Bake 30 to 35 minutes, or until heated through and bubbly. Serve topped with additional sour cream, guacamole, shredded lettuce and chopped tomatoes.
