    MY FRIEND "MELISSA CLAPP"

    List of Ingredients




    1/4 c. Chopped onion
    1 #2 cans ready cut up tomatoes
    3 oz. canned diced green chilis
    1 c. sliced mushrooms
    2 2/3 c. canned pinto or kidney beans,drained
    1 T. chili powder
    1 t. cumin
    8 corn tortillas, cut in 1 inch wide stirps
    8 oz. shredded cheddar cheese(more if you love cheese)
    1 c. sour cream

    Recipe



    Preheat oven to 350 degrees. In nonstick pan, saute onion about 4 minutes. Add tomatoes, chilis, mushrooms, beans, chili powder, and cumin. Simmer uncovered 10 minutes. In 11 1/2 X 7 1/2 inch casserol dish, arrange 1/3 of the tortilla stips in a single layer. Set aside a little of the cheese for garnishing. Pour 1/4 of the tomato mixture and 1/3 of the cheese over tortilla strips. Repeat layers
    ending sour cream and the last 1/4 tomato mixture. Top with reserved cheese. Bake 30 minutes. Makes 8 servings.
