4-6 Turkey thigh/leg combinations
1 Gallon Canola oilRecipe
Lay turkey in a roasting pan in a single layer. Cover turkey with canola oil. Put in a 200 degree oven for 6-8 hours. Turkey should be falling apart tender. Remove from oven and let cool to room temperature.
Turkey can be stored refrigerated for weeks still covered with oil.
To serve: Remove turkey from oil, pat dry and heat in 500 degree oven on a sheetpan for 15-20 minutes or until skin is crisp and turkey is hot.
Alternatively take meat off bones and reheat in some turkey stock
