Hot Chile Mayo:
2/3 cup mayonnaise
1 lime, juiced
1 tablespoon hot chile sauce (such as sriracha or sambal oelek). Can be adjusted to taste..
Pickled carrots and radish:
2 cups coarsely grated or julienned carrots
2 cups coarsely grated or julienned peeled daikon (Japanese white radish)
1/4 cup unseasoned rice vinegar
1/4 cup sugar
1 teaspoon coarse kosher salt
1 tablespoon Asian sesame oil
1 English cucumber, thinly sliced into rounds
4 Jalapeno pepper, thinly sliced into rounds (optional)
4 Baguettes - light with soft interior (not dense) - Hoagy rolls at Publix work well.
cooked chicken white meat, sliced - about 6 oz. per sandwich
Recipe
For Hot Chili Mayo:
Mix all ingredients together.
For Pickled carrots and radish:
Mix all ingredients together, let stand at room temperature for about an hour tossing frequently.
Sandwich:
Cut baguette in half and spread Chile sauce on both halves.
Working from the bottom up, assemble as follows:
cucumber, jalapeno, chicken, pickled vegetables.
