- 3/4 CUP FLOUR
- 1 TSP. BAKING POWDER
- 1 TSP. PUMPKIN SPICE
- 2TSP. CINNAMON
- 1/2 TSP SALT
- 1/2 TSP.NUTMEG
- 3 EGGS, SLIGHTLY BEATEN
- 1 CUP SUGAR
- 2/3 CUP CANNED PUMPKIN
- 1 CUP CHOPPED WALNUTS (OPTIONAL)
- FILLING:
- 1 CUP POWDERED SUGAR
- 1 8 OZ. CREAM CHEESE
- 6 TBLSP. BUTTER
- 1 TSP. VANILLA
Instructions
- GREASE A 15X10X1" JELLY ROLL PAN. PREHEAT OVEN TO 375 DEGREES.
- MIX DRY INGREDIENTS IN A SEPERATE BOWL.
- BEAT EGGS AND SUGAR UNTIL FLUFFY. STIR IN PUMPKIN AND BLEND WELL.
- ADD DRY INGREADIENTS ALL AT ONCE.
- POUR INTO JELLY ROLL PAN AND EVEN OUT
- OPTIONAL STEP: SPRINKLE WITH WALNUTS
- BAKE 15 MIN. IN A 375 DEGREE OVEN.
- LOOSEN CAKE ON EDGES AND INVERT ONTO THE TOP DAMP DISHTOWEL SPRINKLED WITH POWDERED SUGAR.
- TRIM OFF EDGES IF NEED BE.
- ROLL UP IN TEA TOWEL AND COOL COMPLETELY.
- UNROLL CAKE. SPREAD WITH CREAM CHEESE FILLING AND REROLL.
- COVER WITH WAXED PAPER AND REFRIGERATE OVERNIGHT.
- SLICE INTO 1 INCH SLICES. DUST WITH POWDERED SUGAR IF DESIRED.
- MAKES 1 PUMPKIN ROLL
