    • 2 cups sugar
    • 1 cup cooking oil
    • 1/2 cup pineapple juice
    • 4 eggs
    • 2 cups flour
    • 2 tsp baking soda
    • 1 tsp salt
    • 1 tsp cinnamon
    • 1 can crushed pineapple
    • 2 cups grated carrots
    • 1 1/2 cup nuts

    Recipe



    Drain pineapple, reserving 1/2 cup liquid. Mix sugar, oil, pineapple juice
    and eggs throughly.
    Add sifted ingredients. Fold in carrots, pineapple, and nuts. Mix well
    Pour into 9X13" pan. Bake at 325 degrees for 40-50 minutes.



    Frost with cream cheese frosting:
    1 1/2 Tbsp butter.
    4oz. cream cheese
    1-1/2 cups powdered sugar
    1 1/2 tsps. vanilla--Blend.
