Spaghetti Sauce for Canning

List of Ingredients
6 Quarts peeled, chopped tomatoes
2 cups chopped onion
2 cups chopped celery
1 cup chopped green pepper (optional)
½ cup olive oil
2 tbsp minced garlic
3 (12 oz.) cans tomato paste
6 tbsp dried oregano
4 tbsp dried basil
3 tbsp salt
2 tbsp pepper
½ cup sugar
Recipe
Put all ingredients in a large pot and bring to boil. Reduce heat, cover loosely and simmer for 2-3 hours stirring occasionally.
Makes about 8 quarts.
Process as if doing tomatoes.
