AS USUAL, IF YOU KNOW MY HOME PAGE, I KINDA DIG RICH DISHES, ALWAYS WITH TOO MUCH CHEESE TO BE REASONABLY HEALTH CONSCIOUS. BUT, HEY, YOU GOTTA SPLURGE EVERY NOW AND THEN!!!!
List of Ingredients
- 2 PACKAGES FROZEN SPINACH
- 1 MEDIUM ONION CHOPPED FINE
- 1/4 CUP BUTTER
- 2 CLOVES GARLIC CHOPPED
- 1 TABLESPOON NUTMEG
- 1/4 TSP SALT
- 1/4 TSP PEPPER
- 1 4 OZ PHILADELPHIA CREAM CHEESE
- 1 1/2 CUP COTTAGE CHEESE
- 1/4 CUP FRESH GRATED PARM
Instructions
- COOK SPINACH JUST UNTIL THAWED, DRAIN WELL!!!
- SAUTE' THE SPINACH (YES, THE SPINACH!) ALONG WITH THE ONION, GARLIC, NUTMEG, SALT, AND PEPPER UNTIL THE ONIONS ARE JUST CLEAR. (DO NOT BROWN!!)
- MIX ALL INGREDIENTS TOGETHER AND BAKE IN GLASS BAKING DISH UNCOVERED AT 375 FOR 35 MIN OR 350 FOR 45 MIN (YOU KNOW YOUR OVEN)

AS ALWAYS WITH ME, THIS IS RICH!! IF YOU ARE LUCKY ENOUGH TO HAVE A KID WHO ACTUALLY LIKES SPINACH YOU GOTTA GOOD DEAL WITH THIS (MINE TAKES SPELLS WITH VEGGIES BUT SHE LIKES THIS!!)
