SPECTACULAR SQUASH CASSEROLE
Recipe Introduction
THIS IS A POPULAR VEGETABLE CASSEROLE THAT I HAVE BEEN ASKED MANY TIMES FOR THE RECIPE AFTER "GET TOGETHERS." IT IS JUST AS GOOD LEFT OVER, AND BELIEVE IT OR NOT, KIDS LOVE IT!!!! HERE GOES....ENJOY!!!
List of Ingredients
- 4 POUNDS FRESH YELLOW SQUASH
- 1 LARGE YELLOW ONION SLICED (I FAVOR VIDALIA)
- 1 LARGE EGG BEATEN
- 1/4 CUP MILK
- 1 CAN CREAM CELERY SOUP
- 4 OZ SOUR CREAM
- 4 OZ PHILADELPHIA CREAM CHEESE
- 1 CUP SHREDDED SHARP CHEDDAR CHEESE
- 1 TSP SALT
- 1/2 TSP FRESH GROUND BLACK PEPPER
- 1/4 CUP MELTED BUTTER (PLEASE DON'T USE MARGARINE)
- 11/2 CUPS FINE BREAD CRUMBS DIVIDED
Instructions
- COOK SQUASH IN WATER UNTIL JUST TENDER, DRAIN WELL.
- WHILE SQUASH IS COOKING, SAUTE' ONION, PEPPER, AND SALT IN BUTTER. (DON'T LET THE ONIONS BROWN.)
- MIX ALL INGREDIANTS EXCEPT 1/2 CUP BREAD CRUMBS AND THE SHREDDED CHEDDAR CHEESE.
- YOU ARE ALMOST DONE!!! POUR ALL INTO GLASS BAKING DISH AND TOP WITH REMAINING BREAD CRUMBS AND CHEESE.
- BAKE AT 350 TO 375 (YOU KNOW YOUR OVEN) FOR ABOUT 30 MINUTES.
Final Comments
THIS IS A VERY RICH CASSEROLE, HOWEVER, IF YOU VARY ON THE INGREDIENTS TO BE OVERLY HEALTH CONSCIOUS IT WILL ALTER THE TEXTURE AND TASTE. LIKE I ALWAYS SAY, YOU GOTTA SPLURGE EVERY NOW AND THEN!!!
