2 3/4 C flour
1 t baking soda
1/2 t salt
1/2 C (1 stick) butter, room temperature
1 1/2 C sugar
4 eggs
1 t almond extract
1 1/2 C sour cream
1 1/2 C sour cherries
Recipe
Preheat oven to 400 degrees. Grease muffin tin cups. Combine flour, soda and salt in a bowl; mix well. In a mixer bowl, cream butter and sugar well. Beat in eggs, almond extract and sour cream. Add dry ingredients; mix until moistened, overmixing will make muffins tough. Fold in cherries. Fill greased muffin cups with batter. Bake 20-25 minutes, or until toothpick comes out clean and tops are golden brown.
