    Confetti Mashed Potatoes

    List of Ingredients




    2 c. mashed potatoes
    3 tsp. butter
    2 Tbsp. green pepper, chopped
    2 Tbsp. pimento, chopped
    1/3 c. Cheddar cheese, grated
    1/4 c. grated Parmesan cheese

    Recipe



    In a skillet, melt butter and cook onions and green
    pepper until limp. Stir into mashed potatoes. Add remaining
    ingredients. Put in buttered casserole and bake at 325 degrees about
    20 to 30 minutes. You might want to have more mashed potatoes.
