    Grilled Turkey Thighs

    4 boneless turkey thighs
    1/2 C oil (part olive or grapeseed oil, with the rest being less expensive vegetable oil)
    2 T Worcestershire Sauce
    1/4 t liquid smoke
    Garlic Salt
    Hot red pepper sauce
    3 to 4 t Dijon mustard

    With a meat mallet and cutting board, pound thighs flat to about 1/4 in. thickness. Place in a single layer in a glass dish.
    Whisk together the oils, Worcestershire sauce, liquid smoke, garlic salt, hot sauce & Dijon mustard (or sprinkle on salt & hot sauce to help judge desired amounts) and pour over turkey thighs.
    Marinate at least 15 minutes, not more than 30, at room temperature.
    Meanwhile, have charcoal briquets (about 20) burning in a kettle grill until covered with white ash.
    Grill turkey thighs, 5 to 8 minutes per side, depending on how hot the fire is. Serves 4.
