    Easy Baked Potato Soup

    List of Ingredients




    5 medium russett potatoes
    6 T. margarine
    2/3 c. flour
    6 c. skim milk
    salt/pepper
    1 c. sour cream
    3 oz. cooked bacon
    1 bunch green onions, chopped
    8 oz. shredded cheddar

    Recipe



    Wash, dry and pierce potatoes with a fork. Place in white plastic bag.Tie a double knot. Cook 10-12 minutes on HI; remove bag and cut open carefully-it will be very hot. Cool potatoes. Melt margarine in a large pot. Add flour, whisk to combine. Add milk slowly, whisk until slightly thickened. Chop potatoes including skins. Sprinkle with salt and pepper. Add to soup, stirring well. Add sour cream, bacon, onions and cheese, reserving a little for garnish
